    甜叶菊(Stevia rebaudiana Bertoni)作为一种兼具重要商业价值和健康应用前景的天然甜味剂,近年来在食品工业和功能性食品领域受到广泛关注。其叶片富含的甜菊糖苷具有高甜度、零热量的特性,使其成为替代人工甜味剂的理想选择。近年来,越来越多的证据表明,甜叶菊及其活性成分不仅具有优异的甜味特性,更展现出包括抗氧化与抗炎、治疗代谢相关疾病、抗癌与调控细胞周期、保护胃肠与肝肾、抗菌与维持口腔健康等在内的多重药理作用。这些突出的利用价值使得甜叶菊在食品、保健品、动物饲料、环境治理等多个领域展现出巨大的应用潜力。该文系统综述了甜叶菊活性成分的化学成分、药代动力学特征、药理性质及安全性评估,并阐述了其在食品、保健、农业等领域的创新应用。此外,文章分析了甜菊糖苷生物合成的最新进展,并提出了促进瑞鲍迪苷M规模化生产的策略。该文旨在为甜叶菊在多行业领域的深度开发利用提供科学支撑,以期推动甜叶菊产业向高附加值、多元化方向可持续发展。

    Abstract:

    In the food industry and functional food sector, Stevia rebaudiana Bertoni has gained notable attention as a natural sweetener with commercial value and health benefits. Its leaves contain steviol glycosides, which are high-intensity, zero-calorie sweetening compounds that serve as ideal alternatives to artificial sweeteners. Notably, growing evidence suggests that beyond its sweetening properties, stevia and its active components exhibit multiple pharmacological effects, including antioxidant and anti-inflammatory activities, management of metabolic disorders, anticancer and cell cycle regulation, gastrointestinal and hepatorenal protection, and antibacterial and oral health benefits. These properties make stevia a promising natural material for broad applications in food products, dietary supplements, animal feed, and environmental remediation. This study systematically reviews the chemical composition, pharmacokinetic characteristics, pharmacological properties, and safety profile of the bioactive compounds in stevia while highlighting its innovative applications in food, healthcare, and agriculture. Recent advances in the biosynthesis of steviol glycosides, with particular focus on strategies to facilitate the industrial-scale production of rebaudioside M, are also discussed. The collected data provide scientific foundations for the expanded utilization of stevia across multiple settings, with a goal of promoting the sustainable development of high-value, diversified stevia-based products.
