    为探究乳酸菌发酵对天麻的营养与风味等品质的影响,选取5种乳酸菌发酵天麻,分析发酵前后天麻营养成分、活性成分及风味特性变化。结果表明:发酵组的天麻总糖含量降低26.77%~32.17%(P<0.05),乳酸含量提升45.41%~74.96%(P<0.05),其中LPL菌株糖酵解活力最强。天麻素含量显著下降(P<0.05),对羟基苯甲醇含量升高,总酚含量升高31.69%~59.22%(P<0.05),LC菌株在高效转化天麻素方面及提升总酚含量方面效果最佳。且发酵后ABTS+和DPPH自由基清除率分别提高17.86%~35.72%、62.61%~98.42%(P<0.05)。在风味方面,发酵后天麻挥发性风味物质更丰富,BAN组产生了最独特且丰富的风味谱,LRH组与未发酵的CK组风味特征最为接近;发酵后天麻苦味强度、回味涩味和回味苦味无明显变化,但酸味、咸味和丰富度提升,涩味显著降低(P<0.05)。综上,乳酸菌发酵天麻的营养、风味及功能活性等综合品质得到改善,可为天麻食品开发提供参考。

    Abstract:

    The aim of this study was to investigate the effects of lactic acid bacteria fermentation on the nutritional and flavor profiles of Gastrodia elata. Five lactic acid bacteria strains were selected; comparative analysis was conducted. Analysis of nutritional and bioactive compounds before and after fermentation revealed that in the fermented G. elata groups, total sugar content decreased significantly by 26.77%~32.17% (P<0.05), whereas lactic acid content increased significantly by 45.41%~74.96% (P<0.05), with the LPL strain exhibiting the strongest glycolytic activity. Gastrodin content decreased significantly (P<0.05), whereas p-hydroxybenzyl alcohol levels increased. Total phenolic content increased by 31.69%~59.22% (P<0.05), with the LC strain exhibiting optimal performance in efficient gastrodin biotransformation and enhancement of total phenolic compounds. Additionally, antioxidant capacity was significantly improved after fermentation, as evidenced by increased ABTS and DPPH radical scavenging rates (17.86%~35.72% and 62.61%~98.42%, respectively; P<0.05). Flavor profile analysis revealed that fermentation enriched the volatile compound composition of G. elata. The BAN group developed the most distinctive and complex flavor profile, whereas the LRH group maintained the closest flavor resemblance to the unfermented CK group. Electronic tongue analysis revealed no significant changes in bitterness, astringent aftertaste, or bitter aftertaste. However, notable enhancements were observed in sourness, saltiness, and umami richness, along with a significant reduction in astringency (P<0.05). In conclusion, lactic acid bacteria fermentation improves the overall quality of G. elata in terms of nutrition, flavor, and functional activity. This finding provides a reference for developing G. elata-based food products.
