    茶叶是山茶科常绿灌木或乔木植物的嫩叶或芽,通过特定加工工艺加工制成的天然饮品,现已被公认为全球消费地域最广的植物源性饮品。茶多糖是茶叶的主要活性成分之一,是由多种单糖经糖苷键聚合形成的高分子复合物,具有抗氧化、抗炎、调节脂质代谢、调控肠道菌群等多种生物功能,并且其生物活性特征与其结构表征之间存在着密切的构效关系,已成为茶叶近年来开发和应用研究的热点之一。研究表明,茶多糖可通过多种机制改善肝脏损伤,包括抗氧化、抗炎作用、调控脂质代谢平衡以及调节肠道微生物群落等,对酒精性肝病和非酒精性脂肪肝均表现良好的保护作用。该文综述了近年来国内外对各种茶多糖的提取纯化、结构特征及其护肝功效的研究进展,同时还总结了茶多糖改善肝损伤的多种途径如减轻氧化应激、调控免疫- 炎症轴稳态、调节机体脂质代谢紊乱、调节肠道微生物群等,旨在为茶多糖的深入研究及其在食品工业的创新应用提供理论支撑和实践基础。

    Abstract:

    Tea is a natural beverage produced from fresh young leaves or buds of evergreen shrubs or trees in the Theaceae family through specific processing techniques, and it is now recognized as the most widely consumed plant-derived beverage worldwide. Tea polysaccharide (TPS) is one of the main active ingredients in tea, and is a polymer complex formed by the polymerization of multiple monosaccharides via glycosidic bonding. TPS has been found to exhibit multiple biological functions, including antioxidant and anti-inflammatory activities, regulation of lipid metabolism, and modulation of gut microbiota, with a close structure-activity relationship between its bioactivity and structural characteristics. Therefore, TPS is currently a key focus of tea development and applied research. Recent studies have shown that TPS can ameliorate liver injury through various mechanisms, including antioxidant activity, anti-inflammatory effects, regulation of lipid metabolism, and modulation of gut microbiota, with significant protective effects against both alcoholic and non-alcoholic fatty liver diseases. This paper reviews recent advances in domestic and international research on the extraction and purification of various TPS, their structural characteristics, and their hepatoprotective effects. Additionally, the paper summarizes the various pathways by which TPS improve liver injury, including alleviating oxidative stress, modulating the immune-inflammatory axis, and regulating lipid metabolism and gut microbiota. This study aimed to provide theoretical support and a practical foundation for the in-depth research on TPS and their innovative applications in the food industry.
