    食用菌是一类兼具药食两用价值的大型真菌,富含多糖、蛋白质、维生素及微量元素等多种营养成分,其中食用菌多糖因具有抗肿瘤、降血糖、抗氧化、免疫调节等多种生物活性而成为功能性食品和药物研发人员的关注焦点。研究发现硒与多糖结合形成的硒多糖复合物,不仅保留了多糖原有的结构和功能特性,还因硒的引入进一步增强了其生物活性,展现出更广阔的应用前景。该文系统综述了食用菌硒多糖的分离纯化方法、结构特征及其生物活性的研究进展,探讨了食用菌硒多糖在功能性食品领域的应用潜力,并针对当前研究中存在的不足对未来研究方向提出了展望,为其构效关系解析及功能产品研发提供理论参考。

    Abstract:

    Edible mushrooms are large fungi with medicinal and dietary values; they are rich in polysaccharides, proteins, vitamins, trace elements, and other nutrients. Among these components, polysaccharides have attracted increasing functional food and pharmaceutical attention owing to their anti-tumor, hypoglycemic, antioxidant, immunomodulatory, and other bioactive properties. Selenium-polysaccharide (SePs) complexes, formed by combining Se with polysaccharides, retain the original structure and functional properties of polysaccharides and further enhance their bioactivities via the introduction of Se, thereby offering broad application prospects. The isolation and purification methods, structural characteristics, and bioactivities of SePs from edible mushrooms were systematically reviewed in this paper. Additionally, the potential applications of edible mushroom-derived SePs in functional foods were examined; prospects for future research directions were outlined by identifying current research gaps. These findings provide a theoretical basis for understanding the structure-activity relationship and bioactivity mechanism of SePs in edible mushrooms and provide novel perspectives for the development of Se-enriched functional products.
