    为提高桑葚醋风味品质,采用单菌发酵(醋酸菌沪酿1.01)和混菌发酵(醋酸菌沪酿1.01和戴尔有孢圆酵母NJSYGA 2021)分别酿制桑葚果醋,测定单菌发酵桑葚醋(Single-strain Fermented Mulberry Vinegar, SS)和混菌发酵桑葚醋(Mixed-strain Fermented Mulberry Vinegar, MS)的主要理化指标、有机酸以及挥发性风味物质并进行对比分析。结果表明,MS的总酸含量在发酵过程中均高于SS,还原糖含量下降更快。MS的L-苹果酸、L-乳酸、乙酸、柠檬酸和琥珀酸含量较SS分别提高了9.73%、11.80%、22.58%、8.70%和31.18%。SS和MS共检测到87种挥发性风味物质,MS中的物质种类及相对含量更高,尤其是醇类和酯类。苯乙醇、异丁醇、癸酸乙酯和月桂酸乙酯等15种化合物是差异挥发性风味物质。伴生网络结果显示,MS的挥发性风味物质之间关联性更强,苯乙醇、2-壬醇、异丁醇和3-呋喃甲醇等有较强的伴生关系。差异挥发性风味物质富集到乙醛酸和二羧酸代谢、丙酸酯代谢、丙酮酸代谢、糖酵解/糖异生和苯丙氨酸代谢通路。综上所述,混菌发酵更有利于桑葚醋的风味品质,为桑葚醋工艺的进一步优化提供了依据。

    Abstract:

    To improve mulberry vinegar flavor, single-strain (SS) fermentation using Acetobacter pasteurianus HN 1.01 was combined with mixed-strain (MS) fermentation using Acetobacter pasteurianus HN 1.01 and Torulaspora delbrueckii NJSYGA 2021. The physicochemical properties, organic acid composition, and volatile flavor compounds of SS and MS fermented mulberry vinegar were systematically analyzed. The results showed that MS exhibited a higher total acid content and a more rapid reduction in residual sugars than SS. Compared with SS, MS exhibited significantly increased concentrations of L-malic (9.73%), L-lactic (11.80%), acetic (22.58%), citric (8.70%), and succinic (31.18%) acids. In total, 87 volatile flavor compounds were detected across samples, with MS exhibiting superior diversity and relative abundances, particularly of alcohols and esters. A total of 15 differential volatile flavor compounds were identified, including phenylethyl alcohol, isobutanol, ethyl caprate, and ethyl laurate. Co-occurrence network analysis revealed that correlations among volatile compounds were stronger in MS than in SS, especially among phenylethyl alcohol, 2-nonanol, isobutanol, and 3-furfuryl alcohol. Differential metabolites were enriched in the glyoxylate and dicarboxylate metabolism, propionate metabolism, pyruvate metabolism, glycolysis/gluconeogenesis, and phenylalanine metabolism pathways. Overall, MS fermentation significantly improved mulberry vinegar flavor, providing a basis for further optimization of mulberry vinegar production.
