    为探究不同干燥方式对马桑香菇挥发性成分的影响,采用顶空固相微萃取-气相色谱-质谱联用技术(Headspace Solid-Phase Microextraction-Gas Chromatography-Mass Spectrometry, HS-SPME-GC-MS)对马桑香菇鲜菇(Fresh Sample, FS)、热风干燥菇(Oven Drying, OD)和真空冷冻干燥菇(Vacuum Freeze Drying, VFD)的挥发性成分开展组分与聚类分析,比较其差异。结果表明,FS中检测到50种挥发性成分,以含氧化合物(51.44%)和含硫化合物(36.23%)为主,所含3-辛酮与二甲基三硫醚提供主要香气;OD处理后检出34种,其中含硫化合物占比显著升高至63.08%,所含主要化合物为二甲基三硫醚和香菇素,是该状态下的主要呈味挥发性化合物;VFD 检出72种成分,其中含氧化合物(42.50%)和萜类(30.02%)占主导,(+)-柠檬烯与己醛呈现了主要香气。聚类分析表明,在共有化合物中VFD与FS的挥发性成分变化趋势更接近。OD处理可富集大量含硫化合物,VFD处理有利于保留与提升热敏性化合物的数量及含量。该研究为马桑香菇干燥工艺优化和推动高附加值产品开发提供了参考。

    Abstract:

    To investigate the effects of different drying methods on the volatile components of Lentinula edodes cultivated on Coriaria nepalensis wood, headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPMEGC-MS) was used to perform component and cluster analyses in fresh samples (FS), oven-dried samples (OD), and vacuum freezedried samples (VFD), and their differences were compared. The results showed that 50 volatile components were detected in FS, dominated by oxygen-containing compounds (51.44%) and sulfur-containing compounds (36.23%), with 3-octanone and dimethyl trisulfide as the main contributors to the aroma. After OD treatment, a total of 34 compounds were detected, with the proportion of sulfur-containing compounds increased significantly to 63.08%. The main compounds were dimethyl trisulfide and lenthionine, which were the key flavor-active volatile compounds in this state. In VFD, 72 components were detected, dominated by oxygencontaining compounds (42.50%) and terpenoids (30.02%), with (+)-limonene and hexanal as the main contributors to the aroma. Cluster analysis of shared compounds showed that, in terms of volatile-profile evolution, VFD was more closely related to FS. OD treatment significantly enriched sulfur-containing compounds, whereas VFD treatment preserved and enhanced the number and levels of thermosensitive compounds. This study provides a reference for optimizing the drying process and developing high-valueadded products of L. edodes.
