    摘要:

    为了阐明速溶普洱茶的风味特征及物质基础,本研究以四款市售速溶普洱茶为对象,系统分析其关键呈香成分和非挥发性物质含量。应用感官审评、分光光度法、高效液相色谱法(High Performance Liquid Chromatography, HPLC)和顶空进样-气相色谱-质谱联用技术(Headspace-Gas Chromatography-Mass Spectrometry, HS-GC-MS)等技术分析了四款市售速溶普洱茶的风味物质。结果表明,通过感官审评,速溶普洱茶表现出陈香、烘焙香、花香和果香的风味特征。样品中茶多酚、可溶性糖、游离氨基酸的质量分数分别为13.16%~19.19%、9.99%~12.78%、2.54%~4.00%。应用HPLC测定儿茶素总含量在24.82~104.21 mg•g-1,17种氨基酸组分总含量在4.09~20.71 mg•g-1。应用HS-GC-MS检测到68种挥发性物质,其中6个化合物的相对香气活度值(Relative Odor Activity Value, rOAV)>1,包括氧化芳樟醇、月桂烯、2-甲基吡嗪、1,2,3,4-四甲氧基苯、丁醛和戊醛,为本研究速溶普洱茶的关键呈香物质。综上,本文分析了四款市售速溶普洱茶的关键挥发性物质与非挥发性物质,为后续产品品质评价与工艺优化提供理论基础与科学依据。

    Abstract:

    Key aroma-active and non-volatile compounds in four commercial instant Pu-erh teas were systematically analyzed to clarify their flavor characteristics and material bases. The flavor compounds were analyzed using sensory evaluation, spectrophotometry, high-performance liquid chromatography (HPLC), and headspace-gas chromatography-mass spectrometry (HSGC-MS). Sensory evaluation revealed a flavor profile characterized by aged, roasted, floral, and fruity aromas. The mass fractions of tea polyphenols, soluble sugars, and free amino acids in the samples were 13.16%~19.19%, 9.99%~12.78%, and 2.54%~4.00%, respectively. The total catechin content measured by HPLC ranged between 24.82 and 104.21 mg•g-1; the total content of 17 amino acid components ranged between 4.09 and 20.71 mg•g-1. HS-GC-MS detected 68 volatile compounds. Among them, six had relative odor activity values (rOAVs)>1, including linalool oxide (floral and citrus aroma); beta-myrcene (floral and fruity aroma); 2-methylpyrazine (roasted aroma); 1,2,3,4-tetramethoxybenzene (aged aroma); butyraldehyde (light aroma); and pentanal (fruity aroma), which were identified as the key aroma compounds. In conclusion, key volatile and non-volatile compounds in four commercial instant Pu-erh teas were analyzed in this study, providing a theoretical foundation and scientific basis for future quality evaluation and process optimization of related products.
