    为探究大豆分离蛋白(Soy Protein Isolate, SPI)添加量对金线鱼鱼糜凝胶品质的影响,该研究以冷冻金线鱼鱼糜为原料,在添加12%木薯淀粉的基础上,分别添加不同量的SPI(0%~5%,m/m)制成鱼糜凝胶,并分析其白度、质构特性、持水性、蒸煮损失、蛋白质二级结构和微观结构等指标。结果表明:当SPI添加量为3%时,鱼糜品质改善效果最佳,鱼糜凝胶的强度达到最大值24.98 N•mm,较对照组增加了33%;硬度和胶着性达到最大值,较对照组分别提升了27.95%和30.21%;持水性达到了最高值90.77%,较对照组增加了4.91%,蒸煮损失最低;凝胶的结构表现出最好的均匀性与致密性。SPI的添加还影响蛋白质的变性过程,通过提高鱼糜凝胶中疏水相互作用和氢键的含量,导致α-螺旋向β-折叠转变,从而提高鱼糜凝胶的性能。因此,在金线鱼鱼糜凝胶制作过程适量添加SPI能对金线鱼鱼糜凝胶品质起到改善的作用。该研究为海水鱼金线鱼在鱼糜制品中的加工应用提供理论支持。

    Abstract:

    Frozen Nemipterus virgatus surimi was utilized as the raw material, and surimi gels were prepared by adding different amounts of soy protein isolate (SPI) (0%~5%, m/m) on top of 12% cassava starch to investigate the effect of SPI on the quality of N. virgatus surimi gel. The whiteness, textural properties, water-holding capacity, cooking loss, secondary structure, and microscopic structure of the gel were analyzed. The results indicated that surimi quality improved the most when 3% SPI was added. The strength of the surimi gel peaked at 24.98 N•mm, an increase of 33% compared with that of the control group. Hardness and chewiness also reached their maximum values, increasing by 27.95% and 30.21%, respectively, compared with those of the control group. Water-holding capacity peaked at 90.77%, an increase of 4.91% compared with that of the control group, and cooking loss was the lowest. The gel structure exhibited the best uniformity and compactness. SPI addition may also have affected protein denaturation, increasing hydrophobic interactions and hydrogen bond content in the surimi gel, thereby transforming α-helices into β-pleated sheets and improving the performance of the surimi gel. Therefore, adding a moderate amount of SPI during the production process of N. virgatus surimi gel could improve its quality. This study provides a theoretical basis for the processing and utilization of N. virgatus surimi in surimi products.
