    为了调查不同透气性参数的包装袋对茄子采后低温自发气调包装贮藏过程中品质变化的影响,明确适宜茄子低温贮藏的包装膜材料。采用尺寸为20 cm×50 cm的5种不同透气性参数的高密度聚乙烯(High Density Polyethylene, HDPE)袋对茄子进行密封包装,在(12±0.5)℃下贮藏30 d,测定贮藏过程中包装袋内气体成分、果皮硬度、果肉色差、感官评价、过氧化物酶(Peroxidase, POD)、过氧化氢酶(Catalase, CAT)和多酚氧化酶(Polyphenol Oxidase, PPO)活性的变化情况。结果表明,包装膜透气性会显著影响茄子采后自发气调贮藏(Modified Atmosphere Packaging, MAP)过程中的各项测定指标。O2 和CO2透气性参数分别为(4 623±834)cm3•(m2•d•0.1 MPa)-1和(18 033±3 356)cm3•(m2•d•0.1 MPa)-1的包装处理贮藏10 d后包装袋内O2 4.94%(φ)~6.29%(φ)和CO2 4.16%(φ)~4.62%(φ)含量达到相对稳定水平,贮藏第30天时茄子仍保持最高的外观指数(66.11)和最低的腐烂指数(18.75)、冷害指数(7.50),果皮硬度和果肉色差Hue值维持较好,维持POD和CAT抗氧化酶的活性,抑制PPO活性水平维持在较低范围区间。因此,该包装膜可作为适宜的MAP包装材料结合低温贮藏方法延长茄子采后保鲜期30 d,为生产中茄子采后贮藏方法提供重要参考。

    Abstract:

    The effect of packaging bags with different gas permeability parameters on the quality changes of eggplants during postharvest low-temperature modified atmosphere packaging (MAP) storage was investigated, and suitable packaging film materials for eggplant preservation under low-temperature storage were identified. Five types of high-density polyethylene (HDPE) bags (20 cm×50 cm) with varying gas permeability parameters were used to seal and store eggplants at (12±0.5) ℃ for 30 days. Changes in in-bag gas composition (O2 and CO2); peel firmness; flesh color difference; sensory evaluation scores; and activities of peroxidase (POD), catalase (CAT), and polyphenol oxidase (PPO) were measured during storage. The results showed that all measured indicators were significantly influenced by the gas permeability parameters of the packaging film during postharvest MAP storage. Packaging with O2 and CO2 permeability parameters of (4 623±834) cm3•(m2•d•0.1 MPa)-1 and (18 033±3 356) cm3•(m2•d•0.1 MPa)-1, respectively, achieved relatively stable gas levels, with in-bag O2 of 4.94% (φ)~6.29% (φ) and CO2 of 4.16% (φ)~4.62% (φ) within ten days of storage. After 30 days, the eggplants displayed the highest appearance index (66.11), lowest decay index (18.75), and lowest chilling injury index (7.50), with good preservation of peel firmness and flesh color difference (hue value). Additionally, POD and CAT antioxidant enzyme activities were sustained, and PPO activity remained low. Therefore, this packaging film is a suitable MAP material that can be used in combination with low-temperature storage to extend the shelf life of eggplants by 30 days, thus, providing an important reference for the postharvest storage methods of eggplants during production.
