    为了探究植物乳杆菌HC1775发酵对荔枝汁糖酸组成及抗氧化活性的影响机制,该研究通过分析发酵过程中糖酸组分、总酚含量及抗氧化活性变化,并对荔枝汁酶活性分析和果渣的结构表征,阐明多酚释放的潜在机理。结果表明,发酵0~48 h,荔枝汁总糖含量从164.73 mg•mL-1下降至87.81 mg•mL-1,主要由蔗糖含量的变化导致,其含量从95.38 mg•g-1降低至44.98 mg•g-1,还原糖含量从55.99 mg•mL-1下降至40.51 mg•mL-1;发酵产生的主要酸类物质乳酸的含量从0.17 mg•mL-1显著提升至12.10 mg•mL-1,酒石酸含量从1.62 mg•mL-1上升至2.05 mg•mL-1,但是,柠檬酸含量从2.18 mg•mL-1下降至0.13 mg•mL-1,抗坏血酸含量从21.20 mg/100 g下降至11.71 mg/100 g。另外,荔枝汁的总酚含量显著提升,最高达到293.4 mg•L-1,抗氧化活性的变化与其类似,DPPH自由基清除率最高提高19.64%,FRAP值最高提升51.11%。这主要是由于细胞壁相关酶活性提升,破坏了纤维素的氢键和糖苷键,促进了结合酚类物质释放,从而提高了荔枝汁的抗氧化活性。因此,该研究解释了发酵荔枝汁中糖酸组成变化规律和抗氧化活性变化潜在机理,为发酵荔枝汁产品提供理论依据。

    Abstract:

    To investigate the mechanisms underlying the effects of Lactobacillus plantarum HC1775 fermentation on sugar and acid composition and antioxidant activity in litchi juice, this study analyzed the changes in sugar and acid composition, total phenolic content, and antioxidant activity during the fermentation process. Enzyme activity analysis of the juice and structural characterization of the pomace were also performed to elucidate the potential mechanisms of polyphenol release. During the 0~48 h fermentation period, the total sugar content of litchi juice decreased from 164.73 to 87.81 mg•mL-1, which was mainly caused by changes in sucrose content, with its level decreasing from 95.38 to 44.98 mg•g-1, while reducing sugar content decreased from 55.99 to 40.51 mg•mL-1. The content of lactic acid, which was the main acid produced by the fermentation, increased significantly from 0.17 to 12.10 mg•mL-1. Tartaric acid content increased from 1.62 to 2.05 mg•mL-1, whereas citric acid content decreased from 2.18 to 0.13 mg•mL-1, and ascorbic acid content decreased from 21.20 to 11.71 mg/100 g. In addition, the total phenolic content of litchi juice increased significantly, reaching a maximum of 293.4 mg•L-1. The changes in antioxidant activity followed a similar trend, with the DPPH radical scavenging rate increasing by 19.64% and the FRAP value increasing by 51.11%. This was mainly owing to elevated activities of cell wallrelated enzymes, which disrupted hydrogen and glycosidic bonds in cellulose and promoted the release of bound phenolics, thereby enhancing the antioxidant activity of litchi juice. Therefore, this study explains changes in sugar and acid composition and the potential mechanisms underlying changes in antioxidant activity in fermented litchi juice, thereby providing a theoretical basis for fermented litchi juice products.
