    白黄化茶树品种是加工绿茶的优异资源,为探究不同白黄化品种对恩施玉露茶品质的影响,以20个白黄化茶树品种的鲜叶为原料加工成恩施玉露茶,分析其感官品质与主要化学成分的差异。结果表明,奶白茶综合得分最高,为90.12,其游离氨基酸含量最高,达6.68%,酚氨比最低,为1.52;黄金芽和中白1号次之,分别为89.07和86.82,龙井黄得分最低,为76.57。生化成分显示,白鸡冠3号儿茶素总量和茶多酚含量最高,分别为15.77%和18.15%,中黄3号最低,为6.16%和9.92%,中白1号的咖啡碱和水浸出物最高,分别为4.47%和37.76%,淳白1号咖啡碱最低,为2.54%,而中黄3号水浸出物最低,为31.07%。Dot值分析表明,EGCG是茶汤苦涩味的最主要贡献物质,单个氨基酸对茶汤鲜味的贡献度较低(Dot<1)。相关性分析发现,恩施玉露苦涩味主要与EGCG、酯型儿茶素、儿茶素总量、茶多酚呈显著正相关,鲜味主要与游离氨基酸、茶氨酸、天冬氨酸呈显著正相关(P<0.05)。不同白黄化品种的恩施玉露茶有明显差异,为恩施玉露茶特色品种优选提供了理论依据。

    Abstract:

    Albino and etiolated tea cultivars are high-quality and distinctive resources for green tea processing. To investigate the effects of different albino and etiolated cultivars on the quality of Enshi Yulu tea, fresh leaves from 20 such cultivars were processed into Enshi Yulu tea, and the differences in sensory quality and major chemical components were analyzed. The results showed that Nai Baicha achieved the highest comprehensive score of 90.12, with the highest free amino acid content of 6.68% and the lowest phenol-ammonia ratio of 1.52, followed by Huangjinya and Zhongbai 1 with scores of 89.07 and 86.82, respectively, while Longjinghuang scored the lowest at 76.57. Biochemical analysis revealed that Baijiguan 3 had the highest total catechin and tea polyphenol contents of 15.77% and 18.15%, respectively, whereas Zhonghuang 3 had the lowest values of 6.16% and 9.92%, respectively. Zhongbai 1 showed the highest caffeine content of 4.47% and water extract content of 37.76%, while Chunbai 1 had the lowest caffeine content of 2.54%, and Zhonghuang 3 exhibited the lowest water extract content of 31.07%.Dose-over-threshold (Dot) analysis indicated that EGCG was the predominant contributor to both bitterness and astringency of the tea infusion, whereas the contribution of individual amino acids to umami was relatively low (Dot < 1). Correlation analysis demonstrated that bitterness and astringency were significantly positively correlated with EGCG, esterified catechins, total catechins, and tea polyphenols, while umami was significantly positively correlated with free amino acids, theanine, and aspartic acid (P < 0.05). The substantial differences observed among Enshi Yulu tea processed from different albino and etiolated cultivars provide a theoretical basis for the selection of characteristic cultivars for Enshi Yulu tea production.
