    为探究不同产地黑茶的特点,本文利用扩增子测序、电感耦合等离子体发射光谱和感官审评等技术测定了六种黑茶中的细菌多样性、矿质元素、品质特征和主要滋味物质含量。研究结果:锌、咖啡碱在安茶、普洱茶等嫩度高的黑茶中积累较多,锰、硒等元素在茯砖、青砖茶、藏茶等嫩度低的黑茶中积累较多。普洱茶叶底细嫩、易碎;六堡茶茶褐素高,为10.32%,叶底细嫩、完整;茯砖茶可溶性糖高,为54.44mg.g-1,叶底完整、较硬;藏茶水浸出物低,为25.36%,叶底木质化梗较多;青砖茶黄酮低,为9.54mg.g-1,叶底梗多、含碎叶;安茶含水量低,为7.73%,叶底嫩黄。杆菌门、放线菌门等为6种黑茶优势菌群。门水平丰度数据的主成分分析显示安茶与另外五种黑茶之间存在较显著的细菌群落区别。相关性分析提示杆菌、放线菌通过代谢多酚与糖类促进茶褐素形成,含水量显著影响功能菌群生长,进而调控黑茶风味与陈化品质。此次研究为不同产地黑茶品质认识提供一定的参考依据。

    Abstract:

    To explore the characteristics of dark teas from different origins, their bacterial diversity, mineral elements, quality properties and the contents of major taste substances were determined by high-throughput sequencing technology, inductively coupled plasma optical emission spectrometry (ICP-OES) and sensory evaluation, etc. The results were as follows: Zinc and caffeine tended to accumulate abundantly in high-tenderness dark teas like An tea and Pu''er ripe tea, etc, while manganese, selenium, and other elements accumulated more in low-tenderness dark teas like Fu zhuang tea, Qingzhuang tea, and Tibetan dark tea. The infused leaves of Pu''er ripe tea were tender and brittle. Liubao tea had highest theabrownins content at 10.32% and infused leaves were intact and tender. Fuzhuang tea was richest in soluble sugars,whose content was 54.44mg.g-1 and the infused leaves remained intact with relatively firm texture.Tibetan dark tea exhibited the lowest water extract content at 25.36% and its infused leaves contained a large amount of lignified tea stalks. Qingzhuan tea had the lowest flavonoid content at 9.54mg.g-1 and its infused leaves contained numerous stalks mixed with broken leaf fragments. An tea has the lowest moisture content at 7.73% and tender yellow infused leaves. Bacillota and Actinobacteriota, etc.were the dominant bacterial phyla across all six kinds of dark teas. Principal component analysis of microbial abundance data showed that the bacterial community of An tea was significantly different from those of the other five dark teas. Correlation analysis indicated that Bacillus and Actinobacteria promote the formation of theabrownins via the metabolism of polyphenols and carbohydrates. Moisture content significantly regulated the growth of functional microflora, thereby modulating the flavor and aging quality of dark tea.The study would offer valuable references for the comprehension of quality traits of dark teas from various origins.
