    摘要:

    虾青素是一种具有卓越抗氧化活性的天然类胡萝卜素,但其疏水性、稳定性差及生物利用度低的问题严重限制了其应用。多种载运体系已被应用于虾青素的高效递送,如脂质基系统、天然聚合物基系统和智能响应型递送系统,这些体系提升了虾青素的稳定性、溶解度、生物利用度及靶向性。基于递送系统的优化,虾青素的多种生物活性功能得以更有效发挥,例如保护眼部健康、缓解肠道炎症、抗糖尿病及其并发症、抗癌、保护皮肤健康、预防心血管健康,以及改善代谢性肝病等。目前,虾青素在功能食品中的应用仍面临挑战。为了系统梳理虾青素递送体系的研究进展与应用瓶颈,本文回顾近年来新兴的虾青素递送体系,并对其增强的营养功能和分子机制进行了综述,同时也对虾青素在功能性食品方面的应用和发展前景进行总结,以期为虾青素及其递送系统的研究和应用提供理论基础。

    Abstract:

    Astaxanthin is a natural carotenoid with remarkable antioxidant activity; however, its hydrophobicity, poor stability, and low bioavailability strongly limit its practical applications. Various delivery systems have been developed for the efficient delivery of astaxanthin, including lipid-based, natural polymer-based, and smart responsive delivery systems, which enhance astaxanthin stability, solubility, bioavailability, and targeting. Optimized delivery systems enable astaxanthin to more effectively exert its biological activities, including protecting eye and skin health, alleviating intestinal inflammation, combating diabetes and its complications, fighting cancer, preventing cardiovascular diseases, and ameliorating metabolic liver diseases. However, the application of astaxanthin in functional foods continues to encounter significant challenges. To systematically summarize the research progress and limitations in the application of astaxanthin delivery systems, this review discusses emerging astaxanthin delivery systems, the nutritional functions they enhance, and the underlying molecular mechanisms. Further, it outlines the developmental and application prospects of astaxanthin in functional foods, providing a theoretical foundation for future research and application.
