    调味面制品又称为辣条,因口感独特广受欢迎,但高盐含量可能引发健康问题。该研究针对减盐辣条坯在贮藏期间品质劣变的问题,通过添加改良剂优化产品品质。采用单因素结合正交试验,对辣条坯的质构和感官指标进行主成分分析,确定复配改良剂的最佳配方(糯米粉10%、酵母膳食纤维1%、大豆卵磷脂0.6%、结晶果糖6%)。在37 ℃加速贮藏下,评估了复配改良剂对减盐辣条坯的优化效果。结果表明,在贮藏期间,添加复配改良剂的减盐辣条坯虽与未减盐辣条坯在部分指标上有一定差距,但与减盐40%辣条坯相比,硬度变化改善39.56%,水分含量增加4.73%。红外光谱分析显示,与减盐40%辣条坯对照组相比,添加复配改良剂组的(1 047/1 022) cm-1峰强度比值降低,说明复配改良剂能有效阻碍减盐辣条坯在贮藏过程中的淀粉分子重排,降低老化时有序和无序结构之间的比例,进而延缓减盐辣条坯淀粉老化现象。总之,复配改良剂可有效减缓减盐辣条坯在贮藏期间的硬化和老化现象。该研究可为减盐工艺优化提供理论依据。

    Abstract:

    Seasoned extruded noodles, commonly known as spicy strips, are popular snack foods but typically contain high levels of salt, which pose potential health risks. Quality deterioration of salt-reduced spicy strip blanks during storage was addressed, and product quality was optimized through the incorporation of compound improvers. Single-factor experiments combined with orthogonal design were used to evaluate texture and sensory characteristics and to determine the optimal formulation of the compound improver. The optimal formulation consisted of 10% glutinous rice flour, 1% yeast dietary fiber, 0.6% soybean lecithin, and 6% crystalline fructose. The effects of the compound improver on the quality of salt-reduced spicy strip blanks were further evaluated under accelerated storage conditions at 37 ℃. The results showed that, although certain quality parameters of the salt-reduced blanks with the compound improver differed from those of non-salt-reduced blanks, the addition of the compound improver significantly improved storage stability. Specifically, compared with the blanks subjected to 40% salt reduction alone, the compound improver reduced hardness changes by 39.56% and increased water content by 4.73% during storage. Fourier-transform infrared spectroscopy analysis revealed that the absorbance peak intensity ratio at 1 047/1 022 cm-1 in the compound improver group was lower than that in the 40% salt-reduced control group, indicating that the improver effectively inhibited starch molecular rearrangement during storage. This reduction in the ratio of ordered to disordered structures suggests delayed starch retrogradation and aging. Overall, the incorporation of the compound improver effectively retarded hardening and aging of salt-reduced seasoned extruded noodle blanks during storage. These results provide a theoretical basis and technical reference for optimizing salt reduction strategies in seasoned extruded noodle products.
