    摘要:赤松茸富含蛋白质、多酚及多糖,是开发功能性食品的潜在原料,但=采收成熟度对其品质及功能活性的影响尚不明确。为筛选优质配料,本研究比较了未开伞赤松茸粉(CSR,close-cap Stropharia rugosoannulata)和开伞赤松茸粉(OSR,open-cap Stropharia rugosoannulata)的营养成分、粉体性质、氨基酸组成及滋味活度值、生物活性物质含量、抗氧化能力及α-淀粉酶抑制活性,并采用LC-MS进行成分鉴定。结果表明:CSR的蛋白质(27.06%)、总氨基酸(20.63 g/100g)及总游离氨基酸(34.28 mg·g-1)均显著高于OSR(20.54%、15.45 g/100g、16.35 mg·g-1);CSR的L*值更高(88.36),持水力更优为5.47 g·g-1。风味上,CSR中谷氨酸TAV值(15.80)远高于OSR(8.57),鲜味更突出。活性物质上,CSR的总多酚(9.35 g/100g)和粗多糖(10.12 g/100g)含量更高。CSR的DPPH及ABTS+自由基清除率(87.78%、86.76%)及α-淀粉酶抑制率(64.10%)均显著优于OSR(77.75%、76.73%、34.90%);LC-MS鉴定显示CSR含有6-姜酚、表儿茶素等更丰富的多酚物质。综上,CSR的营养成分、滋味物质、抗氧化活性及酶抑制活性优于OSR,是开发功能性食品的优质原料。本研究为赤松茸的科学采收及高值化应用提供了理论基础。 关键词:赤松茸;采收成熟度;营养成分;α-淀粉酶活性

    Abstract:

    Abstract: Stropharia rugosoannulata is rich in protein, polyphenols, and polysaccharides, making it a promising raw material for the development of functional foods; however, the effects of different harvest maturity stages on their quality and functional activity remain unclear. To identify high-quality ingredients, this study compared the nutritional composition, powder properties, amino acid profile, flavor activity values, content of bioactive compounds, antioxidant capacity, and α-amylase inhibitory activity of close-cap S.rugosoannulata powder (CSR) and open-cap S.rugosoannulata powder (OSR), and identified the components using LC-MS. The results showed that the protein content (27.06%), total amino acids (20.63 g/100 g), and total free amino acids (34.28 mg·g-1) in CSR were all significantly higher than those in OSR (20.54%, 15.45 g/100 g, and 16.35 mg·g-1); CSR also exhibited a higher L* of 88.36 and a superior water-holding capacity of 5.47 g·g-1. In terms of flavor, the TAV value of glutamic acid in CSR (15.80) was significantly higher than that of OSR (8.57), indicating a more pronounced umami taste. Regarding bioactive compounds, CSR had higher levels of total polyphenols (9.35 g/100 g) and crude polysaccharides (10.12 g/100 g), and its DPPH and ABTS+ radical scavenging rates (87.78%, 86.76%) and α-amylase inhibition rate (64.10%) were all significantly superior to those of OSR (77.75%, 76.73%, 34.90%); LC-MS analysis revealed that CSR contains a richer variety of polyphenols, including 6-gingerol and epicatechin. In summary, the nutritional composition, flavor compounds, antioxidant activity, and enzyme-inhibitory activity of CSR were superior to OSR, making it a high-quality raw material for the development of functional foods. This study provides a theoretical basis for the scientific harvesting and high-value utilization of S.rugosoannulata.
