    热应激是因长时间暴露于高温环境引发的一系列生理、生化和行为适应性反应的总称,严重时可导致多器官损伤甚至危及生命。我国幅员辽阔,涵盖大面积高温高湿区域,随着全球气候变暖加剧,热应激对于特殊地域人群公共营养健康的影响日益突出。天然植物资源在传统膳食中被广泛应用于热应激的防治,其提取物因安全、营养、多靶点调节等优势,在这类功能性食品开发中展现出广阔前景。因此,本文基于热应激对机体主要损伤机制的系统梳理,归纳分析了具有防治热应激功能的植物提取物活性成分及其关键作用机制,并在此基础上分析了植物提取物在功能性食品开发中面临的活性成分稳定性、食品加工难点、标准质量控制体系缺失等关键问题,并从组方协同、剂型设计优化、标准化质量控制方法等方面提出了未来发展方向,以期为防治热应激功能性食品的未来研发提供理论参考。

    Abstract:

    Heat stress is a general term for a series of physiological, biochemical, and behavioral adaptive responses caused by prolonged exposure to high-temperature environments. Severe heat stress can lead to multiple organ damage or even life-threatening consequences. China has a vast territory covering large areas with high temperature and high humidity. With the intensification of global climate warming, the impact of heat stress on the public nutritional health of populations in specific regions has become increasingly prominent. Natural plant resources are widely used in traditional diets for the prevention and treatment of heat stress. Their extracts show broad prospects in the development of such functional foods due to their advantages of safety, nutrition, and multi-target regulation. Therefore, based on a systematic review of the main damage mechanisms of heat stress on the body, this paper summarizes and analyzes the active ingredients of plant extracts with heat stress prevention and treatment functions and their key mechanisms of action. On this basis, key challenges in the development of functional foods from plant extracts are analyzed, including the stability of active ingredients, food processing difficulties, and the lack of standardized quality control systems. Future development directions are proposed in terms of formula synergy, formulation design optimization, and standardized quality control methods, aiming to provide theoretical references for the future research and development of functional foods for heat stress prevention and treatment.
