    为筛选江苏地区适制碾茶的茶树品种,通过品质成分检测、儿茶素品质系数与主成分相关性分析,该研究比较了7个碾茶的品质差异。结果表明:在相同遮阴管理措施和加工条件下,7个茶树品种碾茶的品质成分含量与儿茶素品质系数差异显著(P<0.05)。其中茅麓群体种的蛋白质(31.74%)、茶多酚(14.10%)、SDF(4.28%)、总叶绿素(4.89 mg.g-1)、叶绿素b(2.82 mg.g-1)、维生素C(5.72 mg.g-1)与GA(2.32%)等质量浓度及CAI值均最高(15.69),IDF/SDF最低(7.58)。主成分分析表明,水浸出物、可溶性糖、儿茶素组分、维生素C、SDF和IDF是碾茶品质的表征性成分,反应不同茶树品种加工碾茶的品质差异。茅麓群体种的主成分综合得分最高为1.17,表明品质综合特性较好。综上,江苏地区的茅麓群体种加工碾茶的品质较好。该研究为筛选适制碾茶的茶树品种提供重要的理论依据。

    Abstract:

    To screen tea cultivars suitable for tencha production in the area of Jiangsu, quality differences of seven tencha varieties were compared through the detection of quality components, analysis of catechin quality index, and correlation analysis of principal components. The results showed significant differences (P<0.05) in the content of quality components and catechin quality index among seven tencha varieties produced from seven tea cultivars that underwent the same shading management and processing conditions. Among the samples, the Maolu landrace exhibited the highest mass concentrations of proteins (31.74%), tea polyphenols (14.10%), SDF (4.28%), total chlorophyll (4.89 mg•g-1), chlorophyll b (2.82 mg•g-1), vitamin C (5.72 mg•g-1), and GA (2.32%) as well as the highest CAI (15.69), whereas its IDF/SDF ratio was minimum (7.58). Principal component analysis showed that water extract, soluble sugar, catechin components, vitamin C, SDF, and IDF were the characteristic components of tencha quality, reflecting the quality differences of tencha produced from different tea cultivars. The Maolu landrace had the highest comprehensive score of 1.17, indicating the superior quality of tencha produced from the Maolu landrace in Jiangsu. This study provides a significant theoretical basis for screening tea cultivars suitable for tencha production.
