    为探讨小麦经过湿热处理后面条品质变化,该研究分析了小麦初始水分含量(14%~22%)、湿热处理温度(45~85 ℃)、湿热处理时间(15~90 min)对小麦面筋蛋白组成及亚基占比和面条蒸煮特性、质构特性及感官品质的影响规律,并利用响应面方法初步预测小麦湿热处理最佳工艺。结果表明:高温长时的湿热处理后麦谷蛋白含量显著下降,醇溶蛋白含量升高,麦谷/醇溶蛋白比值下降,高分子量麦谷蛋白亚基(High Molecular Weight Glutenin Subunits, HMW-GS)和低分子量麦谷蛋白亚基(Low Molecular Weight Glutenin Subunits, LMW-GS)含量显著降低,γ-亚基含量显著增加。较高强度的湿热处理(水分含量为22%、温度>75 ℃、时间>60 min)会导致面条蒸煮损失率增加,硬度、咀嚼性、弹性和感官评分下降。湿热处理最佳条件为温度56 ℃、小麦初始水分含量18%、时间35 min。此条件下所制作面条的感官评分为83.8,蒸煮损失率为6.02%,综合评分为0.93。与未经处理组相比,面条硬度和咀嚼性稍有增加,吸水率增加了7.63%,感官评分无显著差异。综合可得,小麦经适当的湿热处理后可提升面条品质。该研究为热处理稳定或提升小麦品质提供理论基础。

    Abstract:

    To investigate changes in noodle quality after heat-moisture treatment of wheat, the effects of wheat initial moisture content (14~22%), heat-moisture treatment temperature (45~85 ℃), and heat-moisture treatment duration (15~90 min) on wheat gluten protein composition and subunit ratio, as well as the cooking and texture characteristics and sensory quality of noodles, were evaluated. Response surface methodology was used to predict the optimal process of wheat heat-moisture treatment. The results indicated that high-temperature, long-duration heat-moisture treatment contributed to significantly reduced glutenin content, increased prolamin content, reduced glutenin-to-prolamine ratios, significantly decreased levels of high-molecular-weight glutenin subunits and low-molecular-weight glutenin subunits, and significantly increased γ-subunit levels. Heat-moisture treatment at a higher intensity (moisture content of 22%, temperature >75 ℃, and duration >60 min) led to an increase in noodle cooking loss, with lower levels of hardness, chewiness, elasticity, and sensory scores. The optimal conditions for heat-moisture treatment were found to be a temperature of 56 ℃, initial wheat moisture content of 18%, and duration of 35 min. Under these conditions, the sensory score of the noodles was 83.8, cooking loss rate was 6.02%, and overall score was 0.93. Compared with the untreated group, the hardness and chewiness of the noodles slightly increased, water absorption rate increased by 7.63%, and no significant difference in sensory scores was identified. In conclusion, appropriate heat-moisture treatment of wheat can improve the quality of noodles. This study provides a reference for using heat treatment to stabilize or improve the quality of wheat.
