    为了探明酸性硫酸钙(Acidic Calcium Sulfate, ACS)处理对灰枣黑曲霉病及贮藏品质的影响,以新疆灰枣为试材,通过体外分析ACS对黑曲霉(Aspergillus niger, A. niger)菌落生长、孢子萌发和菌丝体生成的抑制效果,通过体内减压浸泡试验研究其对灰枣贮藏品质参数的影响。结果表明:ACS处理对A. niger菌落总数、孢子萌发和菌丝生长具有显著抑制作用,ACS-10-1(10 000 mg•L-1)抑制率均为100%。扫描电镜显示ACS能显著破坏A. niger微观结构。ACS能有效降低灰枣黑曲霉病的发病率,其中ACS-10-1较CK组抑制率达100%。ACS减压浸泡还可显著降低灰枣自然发病率,延缓水分含量下降,维持可溶性固形物(Total Soluble Solids, TSS)、可滴定酸(Titratable Acid, TA)和抗坏血酸(Ascorbic Acid,AsA)含量,降低表面微生物数量,贮藏60 d,ACS处理组自然发病率较CK组降低39.29%,水分含量、TA和AsA高3.14%、8.13%和2.54%,菌落总数和霉菌及酵母菌落总数下降了1.13和1.43 log10CFU/g。综上所述,ACS减压浸泡处理是一种安全、有效的灰枣杀菌贮藏保鲜方法,可为新疆灰枣产业保质技术研究提供理论依据。

    Abstract:

    To investigate the effects of acidic calcium sulfate (ACS) treatment on black mold infection and storage quality of gray jujube, in vitro assays were conducted to evaluate the inhibitory effects of ACS on Aspergillus niger colony growth, spore germination, and mycelium development in Xinjiang gray jujube. Further, in vivo vacuum-impregnation treatments were performed to examine their effects on the storage quality parameters of gray jujube. The results showed that ACS treatment had a significant inhibitory effect on A. niger colony formation, spore germination, and mycelial development, with ACS-10-1 (10 000 mg•L-1) exhibiting 100% inhibition in all cases. Scanning electron microscopy showed that ACS significantly disrupted the microstructure of A. niger. ACS could effectively reduce the incidence of black mold infection in grey jujube. Compared with the CK group, ACS-10-1 exhibited 100% inhibition. Vacuum impregnation with ACS also significantly reduced natural decay, slowed moisture loss, maintained total soluble solids, titratable acid (TA), and ascorbic acid (AsA) levels, and decreased surface microbial counts. After 60 days of storage, natural decay was 39.29% lower in the ACS-treated group than in the CK group; moisture content and TA and AsA levels were 3.14%, 8.13% and 2.54% higher, respectively, and total colony counts as well as mold and yeast counts decreased by 1.13 and 1.43 log10CFU/g, respectively. In summary, vacuum impregnation with ACS is a safe and effective postharvest sanitizing and preservation method for gray jujube. The results provide a theoretical basis for quality preservation technology in the Xinjiang gray jujube industry.
