Effects of Different Drying Methods on the Quality of Lepista sordida. Based on Physicochemical Properties, Nutritional Components, and Volatile Flavor

    花脸香蘑是我国特色真菌,营养丰富且市场潜力大,但子实体采后易劣变。为明确花脸香蘑干燥加工适配工艺,破解精深加工技术匮乏产业瓶颈,本研究以自主选育‘达香蘑3号’为材料,系统对比了2种传统干燥方式——自然干燥(Natural Drying, ND)、热风干燥(Hot Air Drying, HAD)与2种新型干燥方式——变温干燥(Variable Temperature Drying, VTD)、真空冷冻干燥(Vacuum Freeze Drying, VFD),对花脸香蘑理化特性、营养品质及挥发性风味特征的影响。结果表明,不同干燥方式对花脸香蘑品质影响显著(P<0.05)。与ND组相比,VTD组总酚含量提升27.45%,甜味与必需氨基酸总量最高,风味物质更丰富,适用于高功能化风味产品开发;与HAD组相比,VFD组粗蛋白、多糖、总游离氨基酸及鲜味氨基酸含量分别提升30.59%、45.85%、18.97%、94.19%,复水比提升56.39%,可最大限度保留鲜爽风味与微观结构,是高品质精深加工优选工艺。本研究阐明了干燥工艺对花脸香蘑品质的调控规律,明确了不同场景适配技术,为其干燥加工体系构建、高值化利用及产业化升级提供理论支撑。

    Abstract:

    Lepista sordida.,a native characteristic edible fungus in China,possesses excellent nutritional value and promising market prospects,yet its fruiting bodies are prone to quality deterioration post-harvest. A shortage of intensive processing techniques has restricted its industrial development.To screen optimal drying protocols and address this bottleneck,the self-bred cultivar‘Daxiangmo No.3’was adopted as the test material.Two conventional drying methods, natural drying (ND) and hot air drying (HAD),together with two innovative approaches,variable temperature drying (VTD) and vacuum freeze drying (VFD),were comparatively investigated for their impacts on the physicochemical traits, nutritional quality and volatile flavor profiles of Lepista sordida.The results revealed that drying method significantly affected the overall quality of Lepista sordida. (P<0.05).Relative to ND,VTD increased total phenolic content by 27.45%,and yielded the highest levels of sweet-tasting and essential amino acids as well as more abundant volatile compounds,making it well-suited for developing high-functional flavor-enriched products.Compared with HAD,VFD elevated the contents of crude protein,polysaccharides,total free amino acids and umami amino acids by 30.59%,45.85%,18.97% and 94.19%,respectively,while the rehydration ratio rose by 56.39%.VFD was capable of preserving the fresh taste and microstructure of samples to the greatest degree,thus being the preferred technique for high-end intensive processing.This study elucidated the regulatory effect of drying regimes on the quality formation of Lepista sordida. and clarified targeted drying technologies for different application scenarios.The findings offer a theoretical reference for constructing standardized drying processing systems,facilitating high-value utilization and promoting industrial upgrading of Lepista sordida..
