    为了探讨不同菌种复合对澳洲坚果酸奶冷藏期间品质的影响,本研究评估了嗜热链球菌St)/保加利亚乳杆菌(Ld)分别与干酪乳杆菌(Lc)、嗜酸乳杆菌 (La)、植物乳杆菌(Lp)、鼠李糖乳杆菌Lr)复配对澳洲坚果酸奶在4 ℃冷藏21 d期间理化品质、活菌力和抗氧化活性的影响。结果表明,Ld/St/La组酸奶的TA含量显著高于对照,中后期pH最低,Ld/St/Lc和Ld/St/Lp组产酸能力优于对照;Ld/St/Lp组在贮藏第21d的剪切黏度较低,其余组黏度稳定;活菌数方面,Ld/St/La组乳酸杆菌数量最高,Ld/St、Ld/St/Lc、Ld/St/La组嗜热链球菌数量较高,添加Lp、Lr并未增强菌数量;在抗氧化活性方面,Ld/St/La组的总酚与黄酮含量以及DPPH、·OH清除能力和FRAP值均最优,Ld/St基础上添加Lc、Lp、Lr也提升了冷藏中后期的抗氧化能力。感官评价中,Ld/St/Lc和Ld/St/Lr组评分最高。综上,Ld/St/La组合在提升酸度、益生菌活性及抗氧化能力方面优势显著;Ld/St/Lc和Ld/St/Lr组合感官最佳但抗氧化性稍逊。该研究为澳洲坚果酸奶的菌种优选与工艺优化提供了理论基础。

    Abstract:

    To investigate the effects of mixed starter cultures on the quality of macadamia nut yogurt during refrigerated storage, combinations of Streptococcus thermophilus (St) and Lactobacillus delbrueckii subsp. bulgaricus (Ld) with L. casei (Lc), L. acidophilus (La), L. plantarum (Lp), or L. rhamnosus (Lr) were evaluated. Changes in physicochemical properties, viable cell counts, antioxidant capacity, and sensory characteristics were monitored during 21 days of storage at 4 ℃.The results showed that the Ld/St/La group exhibited significantly higher titratable acidity and lower pH values during the middle and late stages of storage than the control group (Ld/St), indicating stronger post-acidification ability. The Ld/St/Lc and Ld/St/Lp groups also showed relatively strong acidification performance. Shear viscosity remained generally stable in most groups throughout storage, whereas a significant decrease was observed in the Ld/St/Lp group on day 21. In terms of microbial viability, the Ld/St/La group maintained the highest lactobacilli counts, while relatively high streptococci counts were observed in the Ld/St, Ld/St/Lc, and Ld/St/La groups. By contrast, the addition of Lp or Lr did not significantly improve bacterial survival during storage. Among all treatments, the Ld/St/La group exhibited the highest total phenolic content, total flavonoid content, DPPH radical scavenging activity, hydroxyl radical scavenging activity, and ferric reducing antioxidant power, suggesting a superior capacity to preserve or promote antioxidant-related properties during refrigerated storage. Although the addition of Lc, Lp, or Lr also improved antioxidant capacity at the middle and late storage stages, their effects were less pronounced than those of La. Sensory evaluation indicated that the Ld/St/Lc and Ld/St/Lr groups achieved better overall acceptability. Overall, the Ld/St/La combination was more effective in improving acidification performance, maintaining lactobacilli viability, and enhancing antioxidant capacity, whereas Ld/St/Lc and Ld/St/Lr showed advantages in sensory quality. These findings provide useful evidence for selecting mixed starter cultures and optimizing the production of macadamia nut yogurt.
