    不同畜乳凭借其丰富的营养成分逐渐吸引人们的关注,为保证不同畜乳产品质量安全需要对其进行热处理。美拉德反应是乳制品的热处理工艺中重要的化学反应,能够对乳制品的风味、颜色和质量产生直接影响。糠氨酸作为美拉德反应早期产物,是衡量反应进程与热处理程度的重要指标,可以评估产品的质量。畜乳种类、热处理方式、储存条件等都可能会影响乳制品糠氨酸含量。文章系统阐述了不同畜乳中糠氨酸的变化差异,以及影响糠氨酸含量的因素,为不同奶源加工工艺与质量控制标准的精准化制定提供科学依据。

    Abstract:

    Different animal milk has attracted more and more attention due to its rich nutritional components. In order to ensure the quality and safety of characteristic milk products, heat treatment is necessary. Maillard reaction is an important chemical reaction in the heat treatment process of dairy products, which directly affects the flavor, color and quality of dairy products. Furosine, as an early product of Maillard reaction, is an important indicator to measure the reaction process and the degree of heat treatment, which can evaluate the quality of products. Different animal milk and heat processing methods may affect the content of furosine in dairy products.This study systematically expounds the differences and changes of furosine in different animal milk products and the main factors affecting furosine content, which will provide an important scientific basis for formulating precise processing technology and quality control standards for different milk sources.
