    为探究市售蓝莓酒中的基本营养成分,该研究分离提取了10款市售蓝莓酒的多糖组分,测定了其含量和单糖组成,并进一步使用高效液相色谱分析了有机酸、维生素的含量以及使用化学法测定了总酚、总黄酮、总花色苷等营养成分含量。结果表明,大部分市售蓝莓酒的多糖具有多个组分,其中甘露糖、阿拉伯糖及半乳糖为蓝莓酒中多糖的主要单糖,与蓝莓多糖的组成相似。10款市售蓝莓酒中含有奎宁酸(271.73~10 693.36 μg/mL)、乳酸(67.65~1 766.40 μg/mL)及苹果酸(151.53~6 006.40 μg/mL)等含量较高的有机酸,以及在蓝莓酒中检出维生素B1、维生素B2和维生素B6等高含量的维生素,含量分别在0.08~2.89、0~4.35、0~4.95 mg/100 mL范围内。此外,10款蓝莓酒中总酚、总黄酮、总花色苷含量分别在0.18~1.65、0.29~3.48、3.47~117.27 mg/L范围内。通过比较多种成分及其含量,发现4号蓝莓酒不仅含有更多种类和更好含量的维生素,而且其酚类物质的含量也显著高于其他蓝莓酒,因此品质最佳。该研究初步揭示了蓝莓酒的营养成分,为其更深层次的生物活性探究奠定基础。

    Abstract:

    To explore the basic nutrients in commercially available blueberry wine, polysaccharide components from 10 commercially available blueberry wines were isolated and extracted, and their content and monosaccharide composition were determined. Meanwhile, the organic acid and vitamin contents were analyzed through high performance liquid chromatography. The contents of nutrients, such as total phenols, total flavonoids, and total anthocyanins, were determined through chemical methods. The findings indicated that the polysaccharides in the most commercially available blueberry wines had multiple components, with mannose, arabinose, and galactose being the main monosaccharides, similar to the composition of blueberry polysaccharides. All commercial blueberry wine samples had high levels of organic acids, such as quinic acid (271.73~10 693.36 μg/mL), lactate acid (67.65~1 766.40 μg/mL), and malic acid (151.53~6 006.40 μg/mL). In addition, the blueberry wines had high vitamin B1, B2, and B6 contents (0.08~2.89, 0~4.35, and 0~4.95 mg/100 mL, respectively). Additionally, the total phenol, flavonoid, and anthocyanin contents of the 10 blueberry wines were 0.18~1.65, 0.29~3.48, and 3.47~117.27 mg/L, respectively. Comparing various ingredients and their contents suggested that No.4 blueberry wine contained a greater variety and higher amount of vitamins and had a significantly higher content of phenolic substances than the other blueberry wines, indicating the best quality. Overall, the nutritional composition of blueberry wine was preliminarily revealed, laying a foundation for further investigation of its biological activity.
