    为增加果酒品类,丰富果酒口感,以香蕉、桃金娘果实为主要原料发酵制作复合果酒,通过单因素和线性功效系数法结合响应面试验优化香蕉桃金娘酒发酵工艺,测定其理化指标、抗氧化能力及挥发性风味成分。结果表明,香蕉桃金娘酒发酵最佳工艺参数为:发酵菌种Saccharomyces cerevisiae CECA,香蕉汁桃金娘果汁配比3:1,初始糖度25 °Bx,酵母添加量0.15%,初始pH值4.90,在此条件下,香蕉桃金娘酒综合评分达99.9分,酒精度为11.81%vol,糖度为4.73 °Bx,总酸含量为6.14 g/L,黄酮和多酚含量分别为0.15 g/L、2.65 g/L,ABTS+•清除率为93.41%。香蕉桃金娘酒中共检测出72种挥发性香气成分,占比约95.94%,其中异戊醇(苹果香、白兰地香、辛辣味)和乳酸乙酯(玫瑰花香)为主要呈香化合物。该最佳工艺酿制的香蕉桃金娘酒较香蕉酒,呈现出较高的抗氧化活性,具有独特的风味,可为香蕉和桃金娘的开发应用提供理论依据。

    Abstract:

    To diversify and enhance the taste of fruit wine, banana and myrtle fruit were used as primary ingredients to produce a composite fruit wine. The fermentation process was optimized using single-factor testing and the linear efficiency coefficient method in conjunction with response surface methodology. Physicochemical properties, antioxidant activity, and volatile flavor components were also analyzed. The optimal fermentation parameters were as follows: Saccharomyces cerevisiae CECA as the yeast strain, banana juice to myrtle juice ratio of 3:1, initial sugar content of 25 °Bx, yeast addition rate of 0.15%, and initial pH of 4.9. The resulting banana-myrtle wine had a comprehensive score of 99.9, with an alcohol content of 11.81% vol, sugar content of 4.73 °Bx, total acid content of 6.14 g/L, flavonoid content of 0.15 g/L, polyphenol content of 2.65 g/L, and ABTS+ radical scavenging rate of 93.41%. Seventy-two volatile aroma components were detected, accounting for approximately 95.94% of the aroma profile, with isoamyl alcohol (apple, brandy, and spicy scent) and ethyl lactate (rose scent) as the dominant aroma compounds. Compared with banana wine, the banana-myrtle wine produced under the optimized conditions exhibited higher antioxidant activity and a unique flavor profile. This study provides a theoretical foundation for the development and application of banana and myrtle in fruit wine production.
